Dish of the Week: The Lowry Steak Salad

This isn’t a salad, it’s a farm. It has wheat, starch, vegetables, fruit, and livestock — and enough of it all to feed a family of four. Or a Bradley of one. The Simpsons famously said you don’t win friends with salad, but Homer clearly has never been given a steak knife with his lettuce. (Full Disclosure: the only friend I made was with that knife. I otherwise didn’t talk to anyone the entire time. Not even the bartender. Yeah, I just pointed at the menu, so?) I first had this salad years ago, and it has had my heart ever since (but rip the cornbread that used to come with it). Ancho and me have been flirting for years — I just love that smoky, spicy ancho flavor — and that guy is rubbed all over that medium-rare steak. Throw in some sweet, sweet mixed greens, and you’ve got yourself the makings of a real party. This salad doesn’t stop there though — the Lowry piles it high with tomatoes, onions, charred corn, avocado, cheese, tortilla strips and more! It’s decadent in a healthy way. And I like to think my farm-dwelling North Dakotan ancestors would be proud to see this city kid using all parts of the farm buffalo. I mean, I didn’t actually farm any of it, but… I ate it. Isn’t that what’s really important?
